Description:
Produced by the farmer Pere Vallespí, these olives are a real pleasure. They are made following artisan procedures from the property´s empeltre olives, which are left to "die" slowly in the open air, buried in marine salt. After six weeks, once the cold air, the sun and the salt have shrunk the olive, concentrating all its flavours, they are cleaned and put to marinate with orange peel and thyme.
