Description:
Although this cheese has not been in the market for long, it has already managed to conquer the most knowledgeable palates thanks to its delicate taste with lactic notes and pleasant aftertaste to dried fruits and mushrooms.
Its name tou -soft in Catalan- refers to its creamy texture. It is made following artisan methods by the Pyrenees firm Tros de Sort with unpasteurized milk from their own cows feed with grass from the local vast meadows.
It goes great in a cheese table, although, due to its creamy texture and pleasant taste, it is also used in a great number of recipes.
