Description:
This is one the Spanish cheeses with more pedigree. It is made with unpasteurized cow, sheep and goat’s milk, according to availability.
The peculiarity of this cheese lies in the fact that it is left to mature in natural caves for a minimum period of 2 months. The humidity found in these caves enhances the development of penicillium type of mould. Hence this blue cheese boasts its characteristic turquoise streaks.
Its sticky texture, pungent aroma and slightly salty and piquant taste mean that you either love it or hate it.
A good option is to accompany the Cabrales with sweet wines or cider and combine it with dry fruits such as figs or raisins.
